Recipe for success

A menu of seared seafood brochette, caramelised fillet of pork and dark chocolate tart won a team from Leeds University Catering Services a bronze award in a national competition. Marc Mottershead, Simon Wood, Ali Boulares and team manager Wayne Smith collected their award – including first place for their starter created from a box of mystery ingredients – at the University Caterers’ Organisation Chef’s Challenge held at Huddersfield.
